电子鼻系统及其在谷物检测中的应用进展

  • 摘要: 电子鼻技术是近年来迅速发展的气味检测技术之一,可应用于目前以食品安全为背景下的粮食储藏品质评价、农畜产品新鲜度检测和酒类鉴别等研究领域,属于食品工业中无损检测方法。针对国内外电子鼻技术在谷物研究中的应用现状,全文综述了电子鼻的起源、构成、气体传感器阵列和模式识别分析方法等内容,重点介绍从1997年至今,国内外利用电子鼻在谷物检测中的主要研究方向及有关研究结论。最后提出电子鼻的广阔应用前景,希望能为今后的相关研究提供参考依据。 

     

    Abstract: Electronic nose is a kind of odor detecting technology developed rapidly in recent years. It has been used in food quality, safety and many other areas, and it is a nondestructive method. In order to describe the application of electronic nose technology for the domestic and international research in terms of grain, this paper reviewed electronic nose, its basic composition, the identification in the gas sensors as well as pattern classification analysis methods and so on. Besides, this paper highlighted the main research from 1997 in the filed of cereal odor testing, and then offered recent studies of electronic nose detecting of cereal odor, which was hopeful for future reference in related fields.
