体积排阻色谱法检测啤酒生产过程中的糖类化合物和发酵产物

Determination of carbohydrates and fermentable products in beer manufacture using size exclusion chromatograph

  • 摘要: 采用体积排阻色谱结合离子交换模式分离并定量检测麦汁、发酵液和啤酒中的麦芽四糖及以上的寡糖、麦芽三糖、麦芽糖、蔗糖、葡萄糖和果糖。测定结果的相对标准偏差均小于2%,最小检出限0.02~0.15g/L。方法快速、准确、可靠且对环境无害。该方法除能够检测糖类化合物,还可以检测乳酸、乙酸、丙三醇和乙醇等发酵产物,是啤酒企业监控生产过程的有效手段。麦汁和啤酒中均未检出阿拉伯糖。 

     

    Abstract: A detection of oligosaccharide (DP≥4) , maltotriose, maltose, sucrose, glucose, fructose in malt fermentation broth and beer using size exclusion chromatograph was established. RSD was less than 2%, limit of detection was 0. 02 ~ 0. 15g/L . The method was rapid, accurate, reliable and environment friendly. Some byproducts of fermentation like lactic acid, acetic acid, glycerol and alcohol could also be detected simultaneously. It was an effective way for beer enterprises to monitor their products. Arabinose was not detected in malt and beer samples.
